We are going to wrap up the mini-series with Collin and next week we will explore Keaton’s journey to becoming debt-free. Keaton and Collin have the same goal to live debt free but the path each took to arrive at the destination is different. Keaton’s journey is unique to him, and will offer many good learnings.
And isn’t that the way life is? Each one of us has a unique God-given purposed journey, for our benefit and the benefit of others. Keaton and I are excited about sharing with you.
Back to Collin. As he begun this endeavor, he realized that he was in need of a few basic cooking utensils. His need is based on how he cooks. He doesn’t do much baking, but creates simple meals and snacks for himself and guests. Thus his kitchen equipment needs focused on what is necessary to accomplish the task.
After a couple of weeks using what he had, Collin did a quick inventory and assessment of what tools he needed to make life a bit easier. He came up with a short list, a spending plan (budget), and headed to the thrift store. For $10 he purchased a skillet, spatula and a box of forks and spoons. He was also gifted from his aunt Marsha a large pot for cooking pasta, a few smaller pots and utensils. He was also given Grandma Murphy’s cinnamon roll pan – we may made need to have a baking lesson for that – but what a great treat for those freshman boys!
With these few things he can cook just about everything in his repertoire. As both budget and skill increase, so will his equipment. His spices are few as well: oregano, fresh garlic, salt and pepper, and his favorite Schultz’s Sweet Heat Cooking Sauce.
From Collin:
Burritos. Takes about 20 min. Very filling.
Ingredients:
2 cups of water
1 cup of rice
1 can of black beans
1 can of corn
1 tsp of salt
Tortillas (optional)
Hot sauce – Schultz’s Sweet Heat (optional)Rinse rice until the water runs clear, then put water and rice in a covered pot on high. Add salt and stir. Bring to rolling boil, then turn down to low and set a timer for 12min. Add corn and beans, stirring thoroughly and increase heat to medium. Let set for 5-8 minutes, until it is at the consistency you want and most of the water is gone. Eat plain or as a burrito with the hot sauce. Makes about 6 burritos.
If multiplying the recipe, keep the times the same but keep the ingredients proportional.
